Harvest season is amongst us folks which means its time to bake! This rustic apple cake is as simple as it gets and a good way to start using some of those freshly picked apples.

This cake is absolutely delicious and incredibly easy to make. Tangy freshly harvested apples, paired with warm cinnamon and a hint of sweetness makes this the perfect fall cake recipe.

Rustic Apple Cake

INGREDIENTS
Cake
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- pinch Salt
- 3/4 Cup granulated sugar
- 1 Large Firm apple, with peel, cored and chopped
- 3 eggs
- 1/2 cup olive oil
Topping
- 1 Small firm apple, with peel, cored and thinly sliced
- 1/4 cup all-purpose flour
- 2 tbsp granulated sugar
- 2 tbsp packed light brown sugar
- 2 tbsp unsalted butter, softened
- icing sugar (optional)
DIRECTIONS
Cake
- Preheat oven to 350F. Grease 8-inch round cake pan and line bottom with parchment paper, cut to size. Grease parchment paper; set aside.
- In medium bowl, stir together flour, baking powder, cinnamon, salt, and sugar. stir in chopped apples; set aside.
- In seperate medium bowl, whisk eggs with oil and yogurt until smooth. Whisk in flower mixture in a few additions. just until combined. (do not overmix) Pour batter into prepared cake pan, smoothing top.
Topping
- Working with a few at a time, apples slices over batter. In a small bowl, using your hands, mix flour with granulated and brown sugars and butter until mixture resembles course crumbs. sprinkle around apples.
- Bake until cake tester inserted in center of cake comes out almost clean, with just a few crumbs, about 45 minutes. Carefully unmold cake and sprinkle with icing sugar, if using.
