Rustic Apple Cake


Harvest season is amongst us folks which means its time to bake! This rustic apple cake is as simple as it gets and a good way to start using some of those freshly picked apples.

This cake is absolutely delicious and incredibly easy to make. Tangy freshly harvested apples, paired with warm cinnamon and a hint of sweetness makes this the perfect fall cake recipe.

Rustic Apple Cake

Serves 6-10

INGREDIENTS

Cake
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • pinch Salt
  • 3/4 Cup granulated sugar
  • 1 Large Firm apple, with peel, cored and chopped
  • 3 eggs
  • 1/2 cup olive oil
Topping
  • 1 Small firm apple, with peel, cored and thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tbsp packed light brown sugar
  • 2 tbsp unsalted butter, softened
  • icing sugar (optional)

DIRECTIONS

Cake
  1. Preheat oven to 350F. Grease 8-inch round cake pan and line bottom with parchment paper, cut to size. Grease parchment paper; set aside.
  2. In medium bowl, stir together flour, baking powder, cinnamon, salt, and sugar. stir in chopped apples; set aside.
  3. In seperate medium bowl, whisk eggs with oil and yogurt until smooth. Whisk in flower mixture in a few additions. just until combined. (do not overmix) Pour batter into prepared cake pan, smoothing top.
Topping
  1. Working with a few at a time, apples slices over batter. In a small bowl, using your hands, mix flour with granulated and brown sugars and butter until mixture resembles course crumbs. sprinkle around apples.
  2. Bake until cake tester inserted in center of cake comes out almost clean, with just a few crumbs, about 45 minutes. Carefully unmold cake and sprinkle with icing sugar, if using.

How to store Rustic Apple Cake

Can be made ahead and stored in airtight container and refrigerated for up to 4 days.
