These classic wholesome raisin bran muffins are a great way to start the day. Loaded with heart healthy nutrients and completely irresistible. I promise they wont last long in your house!

In this recipe, I added a table spoon of golden ground flaxseed for the added nutritional benefits. Flaxseed a good source of alpha-linolenic acid (ALA) a type of omega-3 that promotes heart health, reduces inflammation, and prevents cholesterols from being deposited into your blood vessels. It is also a good source of protein and fiber, and high in thiamine. In addition to adding ground flax seed into muffins; you can also add it to smoothies, your morning oatmeal, or yogurt parfait.


Raisin Bran Muffins

INGREDIENTS
- 1 1/2 cup wheat bran
- 1 cup buttermilk
- 2/3 cup brown sugar, packed
- 1/3 cup vegetable oil
- 1 egg
- 1/2 vanilla extract
- 1 cup all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raisins
- 1 Tbsp ground flaxseed (optional)
DIRECTIONS
- Preheat oven to 375F. Grease muffin tin or line with parchment muffin liners.
- In a large bowl; mix wheat bran and buttermilk together and let stand 10 minutes.
- in a small bowl; beat brown sugar, egg, oil, and vanilla together until light and fluffy. Stir into buttermilk mixture.
- Sift flour, baking soda, baking powder, salt, and ground flaxseed together; stir into buttermilk mixture just until blended.
- Fold in raisins and spoon into prepared muffin tin.
- Bake for 20-25 minutes until tops spring back when lightly pressed.
- Cool completely on wire rack.


Store in an airtight container at room temperature for up to 4 days, or store in the freezer for up to 3 months.
