These are hands down THE BEST waffles you will ever make! A crisp nutty-tasting waffle with the sweetness of a traditional waffle without all the butter. The batter is really easy to prepare and makes 6 perfect waffles. If you are making for a crowd, the recipe can easily double. You can top the waffles with pure maple syrup, fresh fruit, whipping cream, or my favorite; a homemade strawberry compote.


Tips for Making Multigrain Waffles
- If you follow only 1 direction of this recipe, make sure you let your oats soak in the buttermilk for 15 minutes. This allows the oats to soften for a better texture.
- If you don’t have buttermilk on hand, you can make it by adding 1 tablespoon of lemon juice or white vinegar into a 1 cup measuring cup, and then filling the remainder with milk.
- When adding the wet ingredients into the dry ingredients, don’t over mix the batter. mix it until there are no streaks of flour, some small clumps are perfectly fine.


- When filling your waffle iron, don’t over fill it. As the waffle cooks, the batter will rapidly expand. While many waffle irons have an overspill design (as you can see in my picture below) it’s still not fun to clean up a mess if you don’t have to. I find that 3/4 of a cup is the perfect amount for the waffle maker I have.
- Depending on your waffle iron; you may or may not need to coat it with cooking spray. Read and follow the directions for your waffle iron. I have a Chefman Belgian waffle maker that I purchased from Amazon; it specifically says not to grease before use as it interferes with the non-stick coating.
- To remove the waffle from the waffle iron, gentle lift a corner of the waffle with a rubber spatula, once you lift a corner, you can easily slide the spatula under the rest of the waffle to loosen it.

INGREDIENTS
- 2 cups low fat buttermilk
- 1/2 cup old fashioned rolled oats
- 2/3 cup all purpose flour
- 2/3 cup whole wheat flour
- 1/4 cup wheat germ
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 large eggs, lightly beaten
- 1/4 cup brown sugar, packed
- 1 Tbsp vegetable oil
- 2 tsp vanilla extract
DIRECTIONS
- Mix buttermilk and oats in a medium bowl and let sit for 15 minutes.
- In a large bowl; whisk all purpose flour, whole wheat flour, wheat germ, baking powder, baking soda, salt and cinnamon.
- Whisk eggs, sugar, oil and vanilla into the oat mixture
- Add Wet ingredients into dry ingredients, just until moistened.
- Pour 3/4 cup batter into 8
