These oven baked eggs are an easy, delicious breakfast or brunch. Made with fresh spinach, ripe tomatoes and baked to perfection.
If you’re looking for a quick nutritionally dense savory breakfast, these baked eggs are for you! Quick enough to make on those busy weekday mornings, and a perfect start to bring in the weekend!
If you’re serving a crowd, don’t worry. You can easily scale the ingredient quantities up to match the size of your group. You can also make individual servings in ramekins. Bake time remains the same.
Ingredients and Substitutions
- Tomatoes. I used Cherry tomatoes from my garden. You can use grape tomatoes or your favorite variety of ripe tomatoes. (quarter the tomato if it is of a large variety)
- Spinach. I use spinach for the added protein. You can also use Swiss chard or beet leaf greens.
- Avocado. you can omit the avocado if its not your thing.
- Parsley. You can omit if its not your thing, or switch it up with cilantro.
- Paprika. I like Paprika on baked eggs, you can also use other herbs such as Fresh Basil, fresh Dill, or fresh chives
- You can also add minced garlic, chopped onion.
What to serve with baked eggs
I enjoy my baked eggs with a side of locally made sourdough bread and in season fruit and berries. Not only will you get nice sweetness from the fruit but you will also get added fiber.
Baked Eggs
Time 15 min
| Serves 1
Ingredients:
- 2 Large Eggs
- 1/4 Avocado, diced
- 1 cup spinach
- 6 cherry tomatoes, halved
- 2 tbsp fresh chopped parsley
- 1/2 tsp paprika
- Salt & pepper
- Olive oil cooking spray for skillet

Directions:
- Preheat oven to 425F.
- Spray an 8″ cast iron skillet lightly with cooking spray.
- Place Spinach, tomatoes, avocado, on the bottom of the skillet. Add eggs one at a time on top of the spinach. add a pinch each of salt and pepper, and sprinkle with paprika.
- Bake uncovered in oven for 7-10 minutes. depending how you like your yolks.
- Serve with toasted sourdough bread if desired.
