A classic soup recipe made with fresh ripe tomatoes and fresh herbs blended with a hint of cream. Delicious on its own, but with a side of grilled cheese is always a good idea.
If you’re like me and planted too many tomato plants… again, you’re looking for ways to use up all those fresh beautiful tomatoes. What better way than homemade butter roasted tomato soup!
Ingredients and Substitutions
- Tomatoes. I used San Marzano Roma tomatoes. You can use your favorite variety of ripe tomatoes. You can also use canned or jarred tomatoes.
- Onion. use a sweet yellow or white onion.
- Minced Garlic. use fresh or jarred.
- Thyme. if using dried, use 1 teaspoon.
- Fresh Basil. This can be omitted. But, I do not recommend it. It adds a nice sweetness and brings out the flavor of the tomatoes.
- Half and half cream. The cream cuts the acidity of the tomatoes and makes it extra creamy. Whole milk or vegetable broth also works well.
What to serve with Tomato Soup
Of course, tomato soup’s best friend is a grilled cheese sandwich But if you want to mix it up, serve it with a fresh garden salad or a BLT sandwich, or a tuna melt
Butter Roasted Tomato Soup
Time 30 min
| Serves 4
Ingredients:
- 2 pounds Roma tomatoes, seeded
- 1 medium onion quartered
- 1 clove garlic, minced
- 1 Tbsp fresh thyme leaves
- small handful chopped fresh basil leaves plus more for serving
- 3 Tbsp salted butter
- salt and pepper

Directions:
- Preheat oven to 425F.
- In a large dutch oven; add tomatoes, onion, garlic, thyme, basil, salt, and butter. add a pinch each of salt and pepper. Roast covered in oven until the onion is soft, about 25 minutes.
- Using a slotted spoon, transfer the roasted tomatoes and onion to a food processor. Blend until there are no large pieces remaining. about 2 minutes
- Return the mixture to the dutch oven, stir in cream and warm through. about 3-4 minutes. Taste and add more salt and pepper as needed.
- Serve with fresh basil if desired.
