These peanut butter oatmeal chocolate chip cookies are the best of all the cookie worlds. Peanut butter cookie, meets oatmeal cookie, meets chocolate chip cookie! These cookies never disappoint.

How do you make the perfect peanut butter oatmeal chocolate chip cookies?

- Start by creaming together softened butter, and peanut butter in the bowl of an electric stand mixer on low-medium speed. Gradually add in the brown sugar, white granulated sugar and then slowly add both eggs and vanilla. Beat until nice and creamy smooth. (About 2 minutes)
- next, in a separate medium sized bowl, mix together the dry ingredients (oats, flour, baking soda). Stir into the peanut butter mixture with a spatula or wooden spoon by hand
- now the best part, stir in those semi-sweet chocolate chips!
I used 1 cup of chocolate chips, but if you want more, go ahead and stir in another ¼ to ½ cup.

- Now that the cookie dough is made; lightly grease a couple aluminum cookie sheets with shortening or butter and preheat the oven to 350F.
- Drop the cookie dough by the teaspoon into the lightly greased cookie dough about 1-2 inches apart
- Bake for 10-12 minutes. My cookies took 11 minutes, but it all depends on your oven. Start with 10 minutes and then check to see if then need another minute or two. They should be ever so slightly golden brown on the edge. Remember that the cookies will continue to bake for from the residual heat of the cookie sheet after you remove them from the oven.
- let the cookies cool on the cookie sheet for a few minutes (about 4-5 minutes) and then transfer to a wire rack to cool completely.



FAQ
What are the best chocolate chips to use? I use and recommend semi-sweet chocolate chips as they are the perfect chocolate chip for cookies. semi sweet has the lowest sugar ratio which doesn’t make them as sweet. (Don’t forget we add sugar into the dough) They also hold their shape better as the cookies are baking due to the lower sugar ratio compared to other chocolate chips such as milk chocolate.
Can I add nuts with the chocolate chips? Yes you can. These would be really delicious with some chopped walnuts, or pecans. I would recommend half a cup of chopped nuts in addition to the 1 cup of chocolate chips.
What kind of Peanut butter do you recommend? I used Kraft smooth peanut butter in this recipe. It is my go to peanut butter for cookies as it’s creamy, and has a consistent texture. You can swap for natural peanut butter but keep in mind the texture is a little different than processed peanut butter. Natural peanut butter is a bit on the runny side, and not as consistent. so be sure to mix your natural peanut butter in the jar really well and then you will want to chill the cookie dough before baking for at least 30 minutes.
Can I freeze Peanut butter oatmeal chocolate chip cookies? Yes! In fact after these cookies cool, I put a handful in ziplock bag on the counter to snack on, and then I freeze the rest in an airtight container. (If I don’t freeze them, I will probably eat them all!) Freeze up to 3 months.

Ingredients:
- 1 ½ cup smooth peanut butter
- ½ cup softened butter
- ¾ cup white granulated sugar
- 2/3 cup packed brown sugar
- 2 eggs (room temperature)
- 1 ½ tsp vanilla extract
- 1 cup rolled oats
- ¾ cup all purpose flour
- ½ tsp baking soda
- 1 cup semi-sweet chocolate chips

Directions:
- In the bowl of an electric mixer, cream together peanut butter, and butter. Gradually beat in the sugars, blend in the eggs and vanilla
- In a separate medium sized bowl, combine rolled oats, flour, and baking soda
- stir in the chocolate chips
- drop the dough by teaspoons on a lightly greased cookie sheet
- bake for 10-12 minutes in a Preheated oven at 350F.
- Let cool on pan for 3 minutes before transferring to a wire cooling rack to cool completely.
