Oat Fudge Bars


You can never have enough easy dessert recipes. And when there’s no mixer required and no dough chilling needed – it’s a total win-win. Which is why you’ll love these oatmeal fudge bars.

You’re going to love the soft chewy texture of these bars. The oatmeal mixture is used for both the base, and the crumb topping. I recommend using old fashioned rolled oats instead of quick oats because they create a better texture.

The fudge layer is so easy to make and made with only 2 simple ingredients you probably already have in your pantry. I think my favorite part about making this fudge, is leaving a little extra on the spatula to lick off… you know what I’m talking about! Those calories don’t count you know!

How to make Oat Fudge Bars

  • The first thing you want to do is prep your 8×8 square pan with parchment paper. This will allow for super easy removal from the pan, and easy clean up.
  • Now we want to make the oat mixture. Melt the butter in the microwave in short intervals stirring in between each interval. Once the butter is melted, pour it into a large bowl along with the brown sugar, egg, vanilla extract and salt, and whisk together until smooth. Stir in the flour with a rubber spatula or wooden spoon just until combined. (there should be a few flour streaks left) stir in the oats and candy pieces.
  • Press 3/4 of the oatmeal mixture into the bottom of your prepared pan and reserve the rest for the top. I find its easiest to press the mixture in with the back of a spoon.
  • Now for the fun part, making the chocolate, we can’t forget about the chocolate! It’s literally a perfect layer of soft creamy fudge. In a medium sized saucepan, melt the chocolate chips with the sweetened condensed milk together over low heat. (you may also do this over a double broiler) I recommend using semi-sweet chocolate chips . Once its melted and smooth, pour the entire fudge mixture over the oatmeal base.
  • Top the fudge with the remaining oat mixture, and then pop it into a preheated 350F oven for 20-25 minutes. The top should start to turn a golden brown and the bars will look set.
  • Remove from the oven and let cool before slicing. I usually will let them cool in the pan for about 10-15 minutes before removing them from the pan and placing on a wire rack to cool completely.

How to store Bars

Store your oat fudge bars in an airtight container in the refrigerator for up to 3 days.

Can I freeze Bars?

Yes, you can. Store sliced bars in a single layer in a freezer safe container for up to 1 month. Thaw before serving.

INGREDIENTS

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all purpose flour
  • 1 1/3 cup old fashioned rolled oats
  • 1 cup candy coated milk chocolate pieces (smarties, or M&M’s)

CHOCOLATE FUDGE

  • 1 1/4 semi sweet chocolate chips
  • 1 can sweetened condensed milk (300ml)

DIRECTIONS

  1. Preheat oven to 350F and line a 8×8 pan with parchment paper. set aside.
  2. In a large bowl, whisk together melted butter with sugar, add egg, vanilla extract and salt.
  3. Stir in flour just until combined, stir in oats and candy pieces.
  4. Press 2/3 of the mixture into the bottom of prepared pan and set aside.
  5. Make chocolate fudge. In a medium sauce pan on low, melt chocolate chips with condensed milk, stirring occasionally until smooth. Remove from heat.
  6. Pour chocolate fudge over oat base; top with remaining oat mixture.
  7. Bake for 20-25 minutes or until topping is golden brown and set.
  8. Remove from oven and let cool completely before slicing.
