Apple Feta Spinach Salad


Healthy, feel good spinach salad with fresh apples, feta cheese topped with a tangy honey dijon dressing. Served as a side dish or add in your favorite protein for a complete meal.

This apple feta spinach salad is so easy to put together which makes it great for a week day lunch or a light dinner. Between the crunch of the apples, the soft feta cheese, and the sweet notes of the craisins paired with the honey dijon dressing – it really is the perfect salad.

Substitutes

  • If you don’t have baby spinach, feel free to substitute with spring mix lettuce, or any leafy greens you have in the fridge.
  • No apple cider? White wine vinegar, or apple juice will work just fine.
  • If you want to add more protein, top this salad with grilled chicken.

How long will spinach salad store for?

Spinach salad will keep in the refrigerator in an air tight container, or bowl covered in saran wrap for a couple of days as long as it doesn’t have any dressing on it. The dressing can be made several days in advanced and stored separately in a air tight jar or container. Drizzle dressing over salad before serving.

Apple Feta Spinach Salad

INGREDIENTS

  • 3-4 cups baby spinach
  • 1 pink lady apple
  • 1/2 cup craisins
  • 3 TBSP raw almonds, chopped
  • 1/2 cup feta cheese

DRESSING

  • 4 TBSP olive oil
  • 3 TBSP honey
  • 1 TBSP Apple cider Vinegar
  • 4 tsp dijon mustard

DIRECTIONS

  1. To Make Dressing: Whisk oil, honey, apple cider vinegar, and Dijon mustard until combined.
  2. To make salad toss all ingredients together in a large bowl. Drizzle with dressing.
