No-bake Cadbury Nest Cookies


These soft, chewy, chocolate no-bake cookies made with chocolate, oatmeal, and topped with Cadbury mini eggs are the perfect easy-to-make Easter treat.

Cadbury mini eggs are my favourite Easter treat this time of the year. So naturally, I try to incorporate them into everything! These chewy, sticky no bake cookies are the perfect candidate to make mini egg nests. The best part is, they come together in less than 20 minutes which makes these no-bake Cadbury nest cookies are an absolute must this Easter.

Did I mention that I love Cadbury mini eggs yet? Well if not, I do. I usually always have them on hand in the pantry at this time of the year. (Usually hiding behind something inconspicuous so my husband doesn’t find them!) they are a great treat when you crave something sweet, and even better when baked into a special Easter treat.

No-bake Cadbury Nest Cookies

INGREDIENTS

  • 1 cup sugar
  • 3 TBSP unsweetened cocoa powder
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 1/2 cups rolled oats
  • Cadbury mini eggs

DIRECTIONS

  1. In a medium sized saucepan, add all ingredients EXCEPT rolled oats. Bring to a boil over medium-high heat.  Boil for 2 minutes. 
  2. Remove from heat and add rolled oats.
  3. With a spoon, scoop about 2 tablespoons of oat mixture onto parchment lined baking sheet.  Press 2 chocolate mini eggs into each cookie before.
  4. Chill in fridge or freezer for about 10 minutes or until cookie has become firm. 

Store in an airtight container. They will last about a week in the fridge, and up to a month in the freezer.

Recipe notes

  • You may use salted butter, or unsalted butter. (Whatever you have on hand or want to use up)
  • When it comes to boiling the mixture; it needs to boil for a full 2 minutes. Don’t start timing it until it is at a full boil. if you don’t boil it long enough, the cookies won’t form properly. At the same time, don’t let it boil longer than directed as your cookies can turn out dry, and won’t stick together.
  • boil over medium-high heat stirring frequently to avoid burning.
  • If you boil everything correctly and your cookies still don’t seem thick enough, try adding more oats to thicken the mixture.
