Looking for a simple, healthy vegetable bowl? Look no further! This roasted vegetable bowl is super easy to make and tastes amazing. Great as a meal on its own topped with grilled chicken, or as a side dish with your main course. The great thing about a veggie bowl is; you can add or subtract different vegetables based on your taste. Try adding in some sliced red onion, or cubed beets for some extra flavor and color.

Balsamic Roasted Vegetable Bowl

INGREDIENTS
- 2 cups Brussel sprouts, ends trimmed and halved
- 2 cups sweet potatoes, peeled and cut into 1/2″ cubes (about 1 medium)
- 2-3 slices cooked bacon, cut into 1/2″ pieces
- 1/4 cup balsamic vinegar
- 2 Tbsp olive oil
- Salt & pepper to taste
DIRECTIONS
- Preheat air fryer to 380F.
- Combine Brussel sprouts and sweet potato in a large bowl with balsamic vinegar and olive oil. sprinkle with salt and pepper, toss to coat.
- Roast in air fryer for 15-20 minutes. (you may need to do in batches depending on your air fryer)
- sprinkle with cooked bacon.


Let cool before storing in an air tight container in the refrigerator for up to 3 days.
No air fryer? no problem. roast in a 400F oven for 30-40 minutes until tender.

Tips for Success
- Slice and cube your vegetables evenly to ensure even cooking.
- Avoid overcrowding your air fryer or oven pan placing the vegetables in a thin layer. over crowding can cause steaming rather then roasting.
- Roast at high temperatures. This allows for crispy browned exterior and tender interior. If your vegetables are not browning enough; increase the temperature.
