Double Layered Chocolate Cake


This is my absolute favorite go-to double layered cake. It comes together in a cinch, and hits the spot with the perfect balance of sweetness and chocolate. I’ve tried several chocolate cake recipes over the years, and always come back to this crowd pleaser.  I love that its made with simple ingredients that are usually always on hand for any baker. 

This recipe calls for hot water or hot coffee. The reason we need a hot liquid is that it will help the chocolate release it’s deep rich flavours. Hot coffee will bring out even more chocolate flavour. If you don’t want the added caffeine, hot water will do the trick nicely.
When it comes to milk, I usually only have 2% milk on hand so that is what I use. You may use whole milk.

INGREDIENTS

  • 2 cups all purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot water or hot brewed coffee

CHOCOLATE FROSTING

  • 1/2 cup butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 8 Tbsp milk (or less or more to get desired consistency)

DIRECTIONS

  1. Line two 9″ round pans with parchment paper and grease with shortening. Preheat oven to 350°.
  2. Mix together the flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
  3. In a separate small bowl; Whisk the Milk, oil, eggs, and vanilla together lightly.
  4. Add the wet ingredients into the dry ingredients then add in the hot water or hot coffee, mixing until smooth.
  5. Divide batter evenly between the two pans. Bake at 350° for 30-35 minutes or till toothpick inserted in the center comes out clean. Cool for 10 minutes in the pans, then invert onto cooling racks.
  6. Cool completely before frosting. 
  7. For frosting, beat all ingredients in a bowl till smooth, adding enough milk to get a spreadable consistency.
  8. Place one cake on a cake stand. Spread about a cup of frosting on the top. Place the other cake on top. Frost sides and top of the cake. Decorate as desired.
